Can anyone recommend me some good freeware to do this? I've been trying to do it with Dance Ejay 7 but the interface is about as intuitive as an autistic klingon and frankly I'd rather just use it to piece together pre-trimmed samples.

try Audacity. Emo Squid recommended this and i used it to piece together my TDDO theme tune.

its really easy to use but if you need any help, give me a shout.

Wavepad is pretty good and free - http://www.nch.com.au/wavepad/index.html
I've got quite a few of their tools and they're mostly free. They also do a very good CD ripper.
